and there was cake

I hope you're having a lovely Wednesday!  It is beautiful today; spring time please stay.  Because we have company coming over tonight, I made a little cake.  This cake is always a hit, and it is so simple.







I should have let the icing melt a bit more so that it would have been easier to pour.






1 lemon cake mix
1 box of lemon jello
1 cup water
4 eggs
1/3 cup oil
Bake on 350 for 50-60 minutes.  After the cake has cooled, melt icing in the microwave for about 20 seconds and pour it over the cake.


I am not planning on eating any, but I will tell you what everyone thinks.
On to my own actual eats.  My mom got me a few Luna Bars!

I take one of these with me to school just about everyday.  They never fail in holding me over until I can get home and eat lunch.  


Speaking of lunch, I made a pretty good one.

Nope, it isn't chicken.  It's Naked Chik'n Cutlets from Quorn.  I cooked it in the oven, added lettuce and sun dried tomatoes and put it on a multigrain sandwich thin.  (I much prefer the whole wheat sandwich thins)

Best.Breakfast.Ever

Okay, so I told you that you would be seeing more of my cinnamon roll in a bowl oatmeal.  Well here it is, prepare to drool...









Final product:


1/2 cup oats
3/4 cup water
1/4 cup soy milk
many, many shakes of cinnamon
spoonful Cinnamon Raisin Swirl 
1 slice cinnamon raisin bread

One week later...

Oh, hey.  Last week was insanely stressful.  Tests everyday, family in town, and starting to get sick... oh and not getting to go to the gym AT ALL!  
I did encounter some good eats, but I didn't have time to photograph much.  Here are a few of last weeks highlights.


A plate of deliciousness! Quorn fake chicken nuggets are so delicious!



This tasted like a big bowl of cinnamon roll.  Trust me, you will be seeing it again.




I tried out a bowl of overnight oats.  Okios, strawberries, oats, soy milk, water, and best of all Justin's Nut Butter  


I got some devastating news!  Apparently PB loco went out of business!  And I can't find Chocolate Chip Cookie Dough Peanut Butter anywhere.  Anyone know how to hook a girl up?

Day 06 — Whatever tickles your fancy
I'll go with, favorite peanut butter flavor!  I really love me some Chocolate Chip Cookie Dough Peanut Butter, but since that is now nonexistent... I really like Maple Almond Butter from Justin's Nut Butter.

A little Indulgence

Today has been another day filled with studying (blah) and homework.  But I found time to indulge. Haha, okay so I actually just tried a Zone Perfect Indulgence bar that I had bought recently.  Mmmm, was it good.








According to Zone Perfect, "One bite into this whipped caramel toffee treat and your taste buds will be fooled. Because this may be the most decadent expression of 11 grams of protein and 19 vitamins and minerals you’ve ever tasted."
I have got to agree 100% on that.  It was fantastic.  Maybe a teensy bit sweeter than I like, but it was a great treat.  I'm especially loving the 11 grams of protein!  3 grams of fiber isn't too bad either.  When I saw the tiny package, I was a bit skeptical.  How is that supposed to be enough food to tide me over?  But when I opened it, I was surprised that it was actually a nice sized bar. I would love to try some of the other Zone Perfect flavors!

Spring break minus the break

This week is spring break.. yayyy. Except not.  I go back to multiple tests EVERY day!  I've been trying to get as much studying and homework done as possible so I could have atleast one day off.  I still can't see the bottom of the pile.  Look at this, for ONE test.


On to the food... Yesterday, I ended up going to the grocery store rather than foodie heaven (Whole Foods).  I know, I know but I was on a mission to restock my PB supply!

I'm sure you are asking yourself, "where is the peanut butter?"  No one had any!  Apparently it was hide all your peanut butter from MK day yesterday.  I plan on a trip to Wal-mart in the near future.  They could never let a girl down.

Yesterday's breakfast was a normal bowl of oats, banana, soy milk, and water.

But I mixed it up and used White Chocolate PB & Co. OHHHHH my, I wasn't a huge fan of it before.  I've been won over.  It was fantastic!

I tried out my whole wheat sandwich thins with a boca burger for lunch.. It was amazing.  That bread is incredible!  The nutritional facts make it even better with 100 calories, 5g fiber, and 5g protein.  I may or may not have loved it so much that I am eating it again... right now... for lunch.


Apparently I have been in the mood to try new bread.  I tried a piece of Raisin cinnamon bread with oats this morning.  It was phenom! Take a look see for yourself.



Since I skipped yesterday, I'll do two today.

Day 03 — Your favorite television program
This could possibly be the hardest question.  I definitely watch my fair share of TV.  I love The Office, 90210, Chuck, Gossip Girl, LOST, and just about every show on CW and many other embarrassing reality shows. 

Day 04 — Your favorite book

I never have time to read because I'm always doing schoolwork, but I loved reading 13 Reasons Why.  Oh, and the Twilight saga too

My Life As MK

I'm running really low on my peanut butter supply! I think tomorrow looks like a great day to go to Whole Foods... definitely my favorite store.  I could walk up and down each isle for hours!  I started the day like always with a delicious bowl of oats.


oats, water, soy milk, 1/2 banana, dark chocolate dreams peanut butter


I went to spinning class today.  I loved my instructor!  I wish I could always go Monday mornings... boo school!  Well, she just so happens to teach the total body conditioning class right after spinning.  I decided to give it a go.  I felt great!  By the time I got home I was starving, but soaked with sweat.  I couldn't imagine eating before a shower, but I was starving.  I fixed a quick bowl of kiwi and grapes.  Later for lunch, I made it up as I went and I must say it was DELICIOUS!







1/2 cup whole wheat pasta
zucchini, onion, red bell pepper, garlic
and best of all sun dried tomato

Season finale of My Life As Liz tonight!  And Gossip Girl is back!

I have many favorite movies...but The Notebook is always a winner.

Can you spell lasagna?

No matter how many times I look up the word "lasagna," I can never remember how to spell it!
Anyways, I had a hard time finding "quick" foods to eat when I first became a vegetarian.  My mom is great about buying random things she thinks I will like.  This was a definite winner.

Micheal Angelo's vegetable lasagna:




This stuff is so good.  I cook it in the microwave for about 6 minutes.  Everyone that I've let try it agrees, that it is great!  I'd definitely recommend it to anyone!  I only have one store around me that carries them so I normally buy all that they have and stock up, haha.  The cashiers think I'm crazy... especially if that is the only thing I am buying.  The website normally has some coupons available Micheal Angelo's.

I live for music.  Everyone that knows me, KNOWS that I love music.  My favorite song is a difficult choice, but for the past few years I've been able to choose one.  Mayday Parade - Three Cheers For Five Years.  This song gives me chills every time I hear it. I don't really know how you could NOT like it :)
